About the Recipe
Don't you hate it when recipes start with someone's entire life story... yeah me too. I'm never gonna do that. If you need help finding lactose free ingredients, please take a look at the database tab.
Ingredients
1 yellow onion - diced
1 shallot - diced
3 to 5 cloves of garlic - diced
6oz can tomato paste
1.5 oz vodka
1 tbsp italian seasoning
13.5 oz can unsweetened coconut milk
2 15.5 oz cans of great northern beans or canellini beans or whatever - yolo
salt to taste (but start with at least 2 tsp)
Preparation
Sautee the onion, shallot and garlic until the onions start to brown slightly (about 7 mins)
Add the tomato paste, vodka and italian seasoning. mix well and cook for another 8-10 mins over medium heat. This is very important because it helps to give the tomato paste more depth of flavor.
Then add the coconut milk, and stir to combine. Simmer for 2 minutes.
Drain and rinse the beans, and then add them to the pan.
Add salt and pepper to taste (Don't be shy, she can handle a lot)
Serve with some toasted bread and slurp it down!
